Summer Stone Fruit Salad

Summer's bounty brings out some of the most antioxidant-rich stone fruits, and this recipe is no exception. Boasting vitamins A and C, your immune system will love you.

Ingredients

  • 3 fresh apricots

  • 2 fresh peaches

  • 2 fresh nectarines

  • 2 fresh plums

  • 1 fresh mango or papaya – frozen OK

  • Juice of 1 lime

  • 1/2 chopped walnuts, toasted and coarsely chopped

  • 1/2 tsp Spice Mix

Spice Mix

1 oz. each:

  • Cinnamon

  • Ginger powder

  • Allspice

  • Cardamom

  • Nutmeg

Method

Cut pitted fruit into bite-sized pieces

In a large bowl, toss the chopped fruit with the lime juice.

Sprinkle Spice Mix over fruit and fold in gently until incorporated, then add walnuts and toss lightly. Serve as is or topped with a plant-based yogurt.

Spice Mix is a great way to add aromatics and zest to smoothies, fruit salads, plant-based yogurts, and desserts.

Alternatively, fruit can be served warm by cooking for 5 minutes using:

1/2 cup unfiltered apple juice

1/2 cup cranberries – frozen OK

1/2 cup flax seeds

Store leftovers in an airtight container in refrigerator.
